Castro Clauss
The entire process is made by hand with small oak vintners, a wooden hydraulic hand press and without electricity, recreating the ancient methods of winemaking with modern scale of winemaking and minimal intervention.

We try to highlight the subtleties of the varieties by working with them individually and experimenting with different types of wine.

The new wines are manually poured into oak barrels to age in wood, while the rest are bottled unfiltered without many stabilization treatments. This is followed by maturation in the bottle as necessary in order to give the bouquet to the bottle in a superfluous amount.

They are kept under strict temperature and relative humidity conditions in the winery's underground cellar, which protects their complex organoleptic characteristics until their cork is opened.

The red wines are bottled without filtering by gravity - with manual bottling, fully respecting the character of our wines.
